So...I'm all pleased with myself!  I tried growing celery this year for the first time.  People thought I was crazy...because I hilled them up like potatoes...with only the top leaves showing.   But they turned out great, and taste perfect!

You can chop it up and freeze it. The new Bernardin canning book has a recipe for pressure canned tomatoes and celery at a 50/50 ratio. I did about 7 quarts and it looks great. It should make a great start to a soup or casserole.

Indeed we chopped them up and froze them in 1 cup packages. Excellent for soup and stew all winter long! For sure the milk carton concept would work rather than hilling, but milk cartons would likely have been a little small for these ones. My gardening book states that you can place boards or some such along the sides of them as well...whatever it takes to block the sonlight.
