I am having a bread baking emergency and need advice, this has nothing to do with chickens at all! Unless of course we eat some chicken on or with the bread. I don't want to step on toes soooo is this allowed.

I am not much of an experimental baker, I just follow recipes! I have a recipe that calls for 2 cups whole wheat flour and 6 to 7 cups white flour. Well, I already substituted multi grain for the whole wheat and now have run out of white flour ... blah...I managed to scoop out the last 3 1/2 cups of white but am at least another 3 1/2 cups short. I have lots of multi grain flour, should I just use more of that? Or will that wreck the recipe/bread? No time to go to the store....neighbor is not home!

I think you should be okay using the multi grain but you won't need as much as if you were using white Smile It will be a good hearty bread.

I'm no expert but I think your bread would just not rise as much (with extra multi grain and less white).

You dissolve a vitamin c tablet in a bit of water and add it to your dough. Also make sure your recipe has eggs. If it doesn't add 2 eggs Very Happy

That is too funny Amy.

I am glad there are still people that make bread/buns from scratch. I am not a baker at all, most meals are even cooked by my hubby unless it is something I can pop into a roaster in the oven. LOL.
Let us know how they turn out, I love fresh made buns, might have to try it.

PC do you have a recipe for your multigrain bread? I would love to try to surprise my husband and make some, he is not a whole wheat type of guy but does like multigrain.

Well the buns are done. Burnt my mouth on the first one, way too hot (duh)! They are much heavier with the multi grain flour but I think I like them more. Who'd a thunk it! I might use a little more white flour than I did today but they are so good! I also made a double batch of hamburger soup and 2 rhubarb/strawberry crumbles. I am surprising my neighbor/friend with supper tonight. She is doing heavy, hard yard work with her hubby today and I know they are working right til 5:00 so I am popping it over at mealtime for them. Thanks again everyone for the great help and nice comments!

PS: don't be too impressed with my cooking/baking, I am trying to butter up hubby for our upcoming trip to Swift Current. I seem to be filling the trailer with bunnies/chicks and empty grain sacks and doing a few deliveries and hopefully a pick up too!

I agree with PC definitely use a natural additive like citric acid or I just use couple tablespoonfuls of Lemon Juice every time I bake with ww or mulitgrain flour.
Makes it wonderfully light and rises so well.

And a couple eggs (especially duck eggs)are a great idea to add too!

This is my all time fave multi grain bread recipe:

Makes 6 loaves

9 Grain Bread

6 tsp salt
11 cups flour
3 cups 9-Grain (By Roger's)or you can use a mix of oats,bran and red river cereal
3 Tablespoons of instant yeast

6 cups hot water
3/4 cup honey
3/4 cup oil
3 Tablespoons lemon juice

3 large eggs


Whisk together the dry ingredients. I use a plastic wash tub basin...
Mix the liquid ingredients and add them to the dry mix.
Stir together
Beat the eggs and add them.

Add 1-2 cups of wholewheat flour as needed to get a nice dough.
Knead for 10-15 minutes until dough is smooth and elastic.
Form dough into a ball and leave to rest(10-15 minutes)
Punch down and divide into 6 balls and roll and shape into loaves.
Let rise until doubled.
Bake in 375 F oven for 35-40 minutes or so.
Wonderful!

I found with whole wheat or multi grain flour you need to leave your dough a little stickier than with white flour. I use 4 large eggs in my recipe mixed with 1TBSp and 1 tsp vinegar and that makes a fairly light fluffy bun.

Thanks mirycreek for taking the time to post your recipe it looks awesome. Hubby loved the buns, he commented on how he would love for me to make them again. I think I'll try the citric acid trick though to make them a little lighter. Great tips everyone!
