Landfowl...more susceptible to problems but much drier and cleaner.

Waterfowl for sure, they are so great to introduce new birds into (especially ducks) and like Sue said way less health issues with them.
They are messier for sure, but with the right set up they are great.

Land fowl, waterfowl are too difficult to find processing for. At least in the okanagan.
