How’s that for a topic starter! Laughing

Ok, so one of the young roos I processed yesterday had tiny black testicles instead of medium sized yellowish ones like all the rest. All the other organs were normal and healthy looking. I’m assuming this means he would have been infertile? Is this a genetic flaw or a disease of some kind? scratch

What kind of chickens were they? Maybe they have a bit of silkie in them? I have heard that Silkie Roosters have Black Testicles. They are a delicacy in Asia, I believe... mmmmmm! Shocked

First thought in my head when I read the title was we have a almost white dog with black testicles.
The second thought, when I read a bit further, was why, when you butcher a rooster, are you digging around looking at their testicles?!! Laughing

Well I did a little google search (and was frankly quite amazed at some of the things I learned while searching for black rooster testicles! Embarassed )
Anyway, on a site about unusual Chinese foods they mention that this is indeed a traditional dish. And according to the article, the pure black roosters will have black testicles.
I can't vouch personally for the accuracy of that...is there anyone out there who raises and butchers black roosters?

I raise Black Orps and have a few Roosters, but have not yet processed any of them yet, I have also not really paid any attention to the color of their Testicles. Shocked
Something to consider as I will eventually be culling off a few here in the coming months. I will have to make note.

No luck on black testicles except in silkie chickens, but here is an interesting write up on eating them. affraid

These are a popular delicacy in China, supposed to enhance male prowess, and improve skin tone for women. They seldom appear in North American cuisines. In China they are available in both pink and black, but the black fleshed silkie chickens are still a very small specialty item in North America, so the black balls are not available here.

Rooster testicles are larger than you might think, but they need to be. A rooster is expected to be up at the crack of dawn, crow his heart out - then "service" 20 or more hens during the day. No slouch he - your rooster is a busy bird. The photo specimens varied greatly in size from 1.13 inches long, 0.6 inch diameter and 0.13 ounce to 2.4 inches long, 1.13 inches diameter and 3.13 ounces. Our ever faithful red kidney bean is in the upper left corner for scale. A 12 ounce tray contained 30 nuts for an average weight of 0.4 ounces each.

Rooster testicles are like little sausages. The casings contain flesh with an appearance and texture similar to tofu. Connoisseurs like them barely cooked so they are very tender and even a little liquid in the center and when you bite into them they kind of go "sploosh" in your mouth. The less experienced may wish to have them cooked a little longer so they have the texture of firm tofu all the way through.

The flavor is quite mild, kind of like tofu with overtones of chicken liver - pretty innocuous, once you get used to the idea of eating roosters 'nads.

Buying: Find rooster testicles in ethnic markets serving Chinese communities. In Los Angeles 168 Market almost always has them and I understand 99 Ranch Market often has them. They're generally put up in foam trays of about 12 ounces and sold at about US $6.99/#. I don't know how available they are in the rest of North America.

Prep: Just rinse and cut off any stringy things dangling from them.

Cooking: Rooster nuts are usually served in a broth with mushrooms or vegetables, prepared rather simply. Some recipes call for marinating them in rice wine before cooking. They don't take a lot of cooking and will be done through and of uniform texture after simmering about 15 minutes, so watch your timing if you like them more tender.

Yield: pretty much as close to 100% as you can get.

Hmph. None of my rooster nut soup for the lot of you then! Razz Kidding! Some things are not meant for consumption (in my mind anyway) and rooster testicles are definitely at the top of the list.

The roo in question was a dark blue Ameraucana, very healthy and just started crowing. So while not black, he was pretty darn close. The only other thing different about him from his hatch mates was his long, straggly tail feathers, which was one of the reasons he got culled in the first place. I also processed two blacks and neither of them had black testicles, so black feathers equaling black testicles doesn’t always hold true. Perhaps silkies are different?

Coopslave, hubby thought the same thing when I brought up the subject at the supper table. Unimpressed is an understatement. Laughing and I wasn’t exactly digging for them, *snicker*, I just couldn’t help but notice the difference from all the other boys. Then curiosity got the better of me. That’s my story and I’m sticking to it! Embarassed

Hmm. My internet searches didn’t turn up much relevant information either. I thought someone here with more processing experience might have seen this before and could shed some light on it, but I guess not. I’ll just have to chalk it up to being one of life’s many mysteries, heh. cyclops
